DIRECTIONS
Cook rice according to packaging.
Prep your veggies: chop the cucumber, shred carrots, and cabbage, slice the green onions and avocado.
Over medium high, heat a splash of olive oil in a nonstick pan. Crack the egg into the pan and fry until crispy on the outskirts and the yolk is slightly runny.
Assemble the bowl: place 1 cup of cooked rice in the middle of a bowl, add cabbage, carrots, cucumbers, avocado, and kimchi around. Place the fried egg on top. Splash a little of soy sauce and garnish with black sesame seeds. Enjoy!
