DIRECTIONS
In a bowl, combine ground turkey, cumin, smoked paprika, garlic powder, chili flakes and oregano. S&P generously. Mix well. Using hands or a scoop, form 5-6 meatballs. Set aside.
Chop up the onion, tomato, red & green pepper, and zucchini.
Over medium high, heat a splash of olive oil in a cast iron or a large pan. When oil starts to smoke, add onion and garlic. Saute, stirring often until translucent, about 1-2 min. Push the onion and garlic to the sides of the skillet. Place the ground turkey balls into the middle of the pan. Sear until browned, about 2 min on each side. Using a wooden spoon, break up the balls into smaller chunks.
When turkey is no longer pink, add the chopped vegetables and S&P to taste. Mix well and saute for another 3-4 min, until peppers and zucchinis are tender. Remove from heat.
Serve the hash with some freshly grated parmesan and chopped parsley. Enjoy!
