GOAT CHEESE STUFFED SALMON




SERVINGS: 3 PREPPING TIME: 10 min COOKING TIME: 15 min



INGREDIENTS:

3 salmon filets

300 gr goat cheese

1 bunch asparagus

200 gr green beans

1 cup packed spinach, chopped

S&P

olive oil

lemon zest

chopped parsley for garnish




 

DIRECTIONS

  1. Preheat oven to 425F°.

  2. Place the goat cheese into a bowl and bring to room temperature. S&P to taste. Add zest of 1/2 lemon and chopped spinach. Mix well.

  3. Oil a large sheet pan. Place salmon filets in the middle. Using a paring knife, make vertical slits in each of the filets (you can cut right through the fish, leaving about 1 inch at the top and bottom intact. Stuff about 1/3 of goat cheese mixture into the middle of each of the filets. Place the asparagus and green beans around the salmon and drizzle with olive oil. S&P to taste. Transfer into the oven and roast until the goat cheese starts to brown and fish is cooked, about 15 min.

  4. Remove from the oven and let it chill slightly. Plate the salmon with the asparagus and green beans on the side. Garnish with freshly chopped parsley and some additional lemon zest. Enjoy!
